cucharadas de vinagre blanco y un litro
de agua aquí lo voy a dejar hirviendo
igualmente por otros cinco o diez

litros de agua y salen aproximadamente

más de agua porque aquí es donde está

adelante se va a convertir en consomé

ojo para mí una buena biblia es con

salsa que voy a preparar es igual de
sencilla voy a meter en agua hirviendo
un poquito de chile de árbol y dos
chiles pasillas este es el chile para sí

poquito de la misma agua 2-3 dientes de

cuartito de cebolla y sazona con sal al

velocidad media para que me queden
todavía enteras esas semillas tan
características del tomatillo que no se
pierden y si te fijas bueno claro es una
salsa verde acid y está por el tomatillo
pero al mismo tiempo hay como que no
queriendo en roja por los chiles no se
alcanza a decidir pero lo que nos
importa realmente es lo rico que va a
quedar en estos tacos y en muchos otros
la verdad para desayuno comida se han
pasado dos horas y media desde que metí
la carne este tiempo como siempre va a
depender del tipo de carne de su tamaño
la costilla ya sabes que siempre se
lleva su tiempo pero la cosa es que me
tiene que quedar así de suavecita que se
desprenda bien
ojo aquí voy a retirar toda la carne del
consume no te me vayas por favor con la
tinta de que esté dura todavía porque
algunas traen el hueso esto está que se
deshace y le voy a dar una ligera
picadita hay gente que prefiere un
poquito más destrozo es que pasarle el

grasita que se va para la superficie con

todo mi caldo con esto no le voy a
quitar la grasa pero sí le quiero quitar
verán todo este residuo que se queda
aquí en el colador es básicamente una
pasta que se hace con las pieles de los
tomates los chiles y este consomé así
como lo ves se ha colado lo voy a dejar
enfriar y me lo llevo al refrigerador
por toda la noche
este paso que acabas de ver no es 100%
necesario bien me puede haber comido
ayer la biblia pero al día siguiente y
en frío es mucho más fácil retirarle
toda esta capital de grasa que ojo
ciertamente me consume no necesita pero
que para nada voy a tirar aquí la voy a
ir poniendo a un ladito porque no sabes
lo indispensable que va a ser para
visitarnos aquí esto ya recalentando la
carne tengo un comal una plancha a fuego
bajito porque únicamente quiero
recalentar no llorar tanto te acuerdas
de la grasa que reserve no es básico y
fundamental para darle el saborcito el
color y la grasita por su fuerza los
tacos voy a poner aquí mis cuatro
tortillas con las que se que pan la
carne de la vida por encima y ojo por
