は創業者の方も寂しいだろうとで私も元々
料理もそんなに嫌いな方ではないし小さい
頃からこれを食べておりましたんでそれ
だったらじゃあ少しずつやってってみよう
かとそれでは私の方で
引き継いでやりましょうというのがことの
初めです
これはあの通常の市場の大田市場からやっ
てます
他の店はどうしてもキャベツが主流ですね
白菜だけでやってるの多分2割ぐらいしか
ないんじゃないでしょうかはいこれから
白菜を茹でようと思います
中国から入ったってことで中国で取れる
野菜それがまず白菜ですね
要は家庭料理の中で
培ったものそれが主になってますね

叩く普通の調理用じゃなくてですねあの
ざっくり切るような
あまりいい包丁ではないんですよね私専門
のやつで重さで

ニラというのはあのまあ昔からのある野菜
なんですけどもここにあの
苦味というですかねそれが若干あるんです
けどもそれをまあゆっくり
切るようにしていきます

豚肉の
臭みみたいなものですね
抑える役目とそれからとても

感じのですねお野菜だと思います
夏場の野菜らしいんですねこれをしっかり
食べることによって

豚バラのひき肉です豚バラはあの油が
美味しいもんですからなるべくそれを多め
のやつを
仕入れています

じゃないとOKの味が元
基本が崩れてしまうんで
変えないでやってます
海外のもの使ったりしてやってみたんです
けどどうしてもダメですね
ですぐ野菜を混ぜるんじゃなくてそれも
やっぱりあの約1日
冷蔵庫で熟成させてで次の日に野菜とあの
混ぜるんです
餃子というのはもともと日本にはなくて
ですね中国の北東部の方で
茶オズというですねそういう案を包んで今
の形でなくてもう少しこう丸っぽい形の
ものがまあ
発症だとその餃子がまあそういう私どもの
創業者が向こうにおりましてそれを一緒に
食べて美味しいということで
抽選になってですね日本に引き上げてきた
とじゃあそこで餃子というものをちょっと
やってみようかということで今の店になっ
たってことなんです
これはあの
普通はあの本日ですね
水でこういう風にやると
くっつきやすいんでいいんですけども私
どもはまあ一応
プロと言うんじゃないですけどもこの野菜
とのですね

こう閉じるときにこの野菜の
水分を使って
閉じるんです
ですから今これ住んでるのは24時間以上
経った案を進んでますその間に
熟成が進んで
美味しい

最初はまず包むことの
作業から始めましてそれが約2年
ぐらいでやっと人並みみたいな感じになり
ました
ましてあまり器用な方じゃないんで最初は
あの
素人さんと同じでこういっぱい入れちゃう
ね

そうするともうどうにもならなくなって
溢れちゃう
それじゃダメだっていうふうに教わって
でこれを1年2年とやっていくうちに自然
にこのまあこの私ですと左手がそのグラム
を
感知するというんですかねこれでいいよと
いうのが教えてくれるんですね
この店を始めた時には何か物足らないと
いうことがすごく感じておりまして
自分で餃子を作り焼いている中でですね
少しずつ少しずつあのどうしたらもっと
美味しくなるのかなそういうのも毎日毎日
こう繰り返してでいろんな試行錯誤を
とにかく繰り返していくそれでここをそう
ですね56年
ぐらいにやっと自分でも
納得できる
餃子ができたということが本音ですね

鍋の時間が経ってたんで
油を引いてこの皮と同じ素材のものを
入れて
混ぜるとね
入れていきます
このぐらいになったら
蓋をしても
これで
6分半ぐらいなんで私のはその最初にお湯
を張ることによって
焼き目がしっかりいる鉄板にですね均等な
麺を作るんですそうすると焼き上がった時
にそのあの
狐によるですねそういう感じが出来上がっ
て
綺麗っていうとねあのお客様も見た目の
あれも大事ですからそれをやっております
けど
この焼けてるその
水がなくなってきたその音の
強弱ですねそれを判断しながら
経験でこんなもんかっていうのは
わかってきてます
時計を見なくてもだいたいそれで
日本でその
羽がブームになったのがですね
8年とかそのぐらい前で元々私どもに羽が
なかったんですねただ自然についてお客
さんが喜ばれるんでじゃあ
作りましょうということで取りますパリッ
とした感じがとても喜ばれます
食べる時にまず焼き上がってそれを何も
まずつけないで
召し上がっていただくこれがまあ一番いい
かなその後に自分でお好みの量の
調味料を入れてもらえればいいと思います
