das zeige ich Dir jetzt der Teig ist
eigentlich relativ simpel wir benötigen
dafĂŒr etwas Weizenmehl Typ 00 alternativ
könnte das stinknormale Weizenmehl Typ
550 aus dem Supermarkt nehmen dann
brauchen wir noch etwas Salz etwas
Zucker frische Hefe weiche Butter und ja
hier haben wir noch Milch ich packe euch
die Mengenangaben so wie immer unten in
die Videobeschreibung wir beginnen auf
jeden Fall damit dass wir die frische
Hefe in die Milch bröseln zack sch alles
ne in die Milch der Han dann können wir
einfach alles mit einer Gabel schön
verrĂŒhren bis das ganze sich
auflöst so probieren wir mal das
ganze es gibt doch nichts besseres als
ein kaltes glÀsle mit Hefe oder hefilch
super klasse auf jeden Fall werden wir
jetzt mit dem Kneten beginnen Freunde
wir kneten den Teig heute nicht von Hand
sondern in meiner Maschine aber wenn ihr
von Hand kneten möchtet let's go 15 bis
20 Minuten kneten das funktioniert
wunderbar als allererstes kommt unser
Mehl in die Maschine dann darf auch
schon das Salz hinzu Zucker und ca 50%
der Hefemilch dann darf der Knethaken
drauf Maschine schlieĂen und starten
wenn das Mehl die Hefemilch gebunden hat
dĂŒrfen wir die restliche Hefemilch
hinzugeben und das Ganze fĂŒr ca ja 12
bis 14 Minuten fertig kneten
so wenn das Mehl die hilfemilch gebunden
hat darf hier die Butter hinzu wir
erhöhgen jetzt die Geschwindigkeit der
Maschine s dass die Butter eingearbeitet
werden kann das lassen wir jetzt noch Z
bis 3 Minuten weiterketen dann haben wir
so eine gesamtknetdauer von etwa ja 16
Minuten und dann zeige ich euch wie es
weitergeht genau 16 Minuten spÀter ist
unser Teig richtig schön geworden
Freunde mega jetzt machen wir folgendes
wir holen den Teig aus der Maschine und
klatschen ihn hier einfach auf die
Arbeitsplatte und jetzt können wir den
Teig a so wie immer ein paar Mal dehnen
und Falten dazu einfach unter den Teig
greifen nach oben ziehen auf die
Arbeitsplatte klatschen und ĂŒberschlagen
dadurch wird noch mal etwas Luft
eingearbeitet und dasen gestÀrkt und das
machen wir jetzt ein paar mal und
anschlieĂend werden wir das ganze dann
richtig schön auf Spannung Schleifen
dazu wieder eine richtig schöne Klaue
bilden und den Teig unter rotieren in
Richtung des Körpers ziehen dabei immer
darauf achten dass man Kontakt zur
Arbeitsplatte hat und dem Hand umdrehen
haben wir eine richtig schöne Kugel mit
Spannung aber Freunde eine Sache dĂŒrfen
natĂŒrlich nicht
vergessen und zwar den slap auf jeden
Fall nehme ich jetzt hier meine SchĂŒssel
gebe in diese SchĂŒssel ganz wenig Ăl
rein ihr könnt Pflanzenöl nehmen also
entweder Olivenöl oder ganz normales
Sonnenblumenöl einfach dass der Teig ja
hier ganz geschmeidig aus der SchĂŒssel
kommt spÀter Zack und der Teig darf
jetzt in dieser SchĂŒssel 60 Minuten mit
einem feuchten KĂŒchentuch Reifen und
danach zeige ich euch wie es weitergeht
60 Minuten spÀter schaut mal hier
Freunde der Teig ist wahnsinnig nicht
gut aufgegangen genauso muss das
Aussehen wir geben dem Teig jetzt auf
jeden Fall eine frontale Faust
SCE dann schieben wir das ganze zur
Seite und jetzt können wir die
Arbeitsplatte mit etwas Mehl bestÀuben
Zack und dann können wir den Teig ganz
bequem hier auf die Arbeitsplatte
stĂŒrzen lassen super nice okay und jetzt
mĂŒssen wir den Teig portionieren zu je
300 g dazu nehme ich hier wieder meine
teigarte und steche mich hier einfach ja
TeigstĂŒcke heraus nachdem wir Teiglinge
zu 300 g StĂŒcken portioniert wurden
dĂŒrfen wir die Teiglinge auf Spannung
schleifen damit wir das ganze spÀter
schön in eine angenehme Form ausrollen
können eins natĂŒrlich könnte ich hier
auch ja so wie beim pizz Backen die
teiglinger auf Spannung Schleifen da
gibt's wirklich viele Techniken hier z.B
dadurch dass der Teig sehr einfach zu
verarbeiten ist ziehe ich ihn einfach
hier mit meinen zwei dre Fingern nach
unten bis ich eine schöne gespannte
Kugel habe gerne hier unten
verschlieĂen jetzt nimmt ihr wieder euer
feuchtes KĂŒchentuch und lasst die
Teiglinge 10 bis 15 Minuten hier auf der
Arbeitsplatte entspannen dadurch lÀsst
sich der Teig spÀter viel leichter
weiter verarbeiten weitere 15 Minuten
spÀter können wir endlich mit dem Formen
beginnen da gibt's zwei Möglichkeiten
ich zeige euch heute die Variante so
dass das jeder zu Hause ja hinbekommt
dazu schiebe ich mir erstmal die zwei
Teiglinge hier zur Seite und bestÀube
die Arbeitsplatte noch mal mit etwas
Mehl dann positioniere ich meinen
Teigling wieder in die Mitte verteile
noch mal etwas Mehl hier und top
verreibe das ganze und dann nehme ich
mich hier einfach mein Nudelholz und
Beginn den Teigling einfach ja etwa 5 mm
dick oder dĂŒnn auszurollen einmal hier
so dann das ganze rotieren und den
Vorgang wiederholen wichtig ist hier zu
beachten dass wir den Fladen sage ich
jetzt mal nicht rund ausrollen sondern
ja wir möchten eine rechteckige Form
kreieren und das ganze soll spÀter ca 25
bis 30 cm lang sein so schaut das ganze
jetzt aus jetzt richte ich mir das noch
etwas mit meinen HĂ€nden zurecht und
jetzt können wir ganz einfach mit
unseren Fingern den Teig zu einer Stange
einrollen gerne mit etwas Druck Àhnlich
wie beim Rouladen machen schön das ganze
ganz bequem einfach ja einrollen jetzt
haben wir eine schöne Stange vor uns
liegen und jetzt mĂŒssen wir den Teil am
Ende zusammen zwicken ne also ihr rollt
das praktisch so auf und jetzt mĂŒssen
wir die Naht verschlieĂen dazu einfach
hier mit den Fingerkuppen das ganze
etwas festdrĂŒcken dann auch noch ganz
wichtig die Enden verschlieĂen einfach
etwas ziehen und zusammendrĂŒcken da
gibt's natĂŒrlich auch noch eine Methode
dass man den Teigling mit den HĂ€nden
gleich zu einer Stange ausrollt das
braucht ein bisschen Ăbung deshalb zeige
ich euch gerne ja wie das eigentlich
jeder zu Hause hinbekommen kann da kann
man eigentlich nichts falsch machen wer
möchte kann natĂŒrlich auch noch das
ganze so hin positionieren und dann
etwas mit der Hand ja verschlieĂen und
wenn ihr dann so eine schöne Stange
hergestellt habt dann seid ihr fertig
und das machen wir jetzt mit allen
anderen Teiglingen und dann zeige ich
euch wie es weitergeht so unsere
hĂŒbschen Stangen sind fertig jetzt
mĂŒssen wir diese auf einem Backblech mit
Backpapier positionieren natĂŒrlich mit
etwas Abstand damit die Dinger nicht
zusammenkleben alriy jetzt dĂŒrfen unsere
stangeen noch mal 60 bis 90 Minuten mit
einem feuchten KĂŒchentuch abgedeckt be
Raumtemperatur gehen und dann kommen wir
zum Finale okie doki ich habe jetzt
meine Teiglinge ja 90 Minuten gehen
lassen freunde die sind richtig richtig
gut aufgegangen jetzt mĂŒssen wir aber
noch was vorbereiten und zwar brauchen
wir eine eistreiche dazu einfach ein Ei
hier in die SchĂŒssel schlagen und dazu
kommt noch ein Schluck Milch einfach nur
so ein Spritzer zack wunderbar und das
ganze jetzt richtig schön
schlagen wie auch immer klasse okay das
sollte ausreichen die Gabel kann weg und
hier habe ich mir wieder Papas
Rasierklinge ausgeliehen wir mĂŒssen
jetzt mit einer Rasierklinge oder mit
einem scharfen Messer die baguettstangen
sag jetzt mal einschneiden dazu gehe ich
einfach hier und schneide das ganze
dreimal leicht schrÀg an den 45° Winkel
einfach hier ansetzen ein 2 drei
wunderbar und das gleiche machen wir mit
den anderen Stangen genauso jetzt nehmt
euch hier so einen gummipinsel und
bestreicht mit der eistreiche eure Subs
einfach hier schön gleichmĂ€Ăig
bestreichen so das wÀre auch erledigt
ihr könnt jetzt eure Subs so toppen wie
Ihr möchtet ich persönlich Feier extrem
cheese Oregano ich habe dazu einfach
etwas Parmesan feing gerieben und
Oregano reingefĂŒllt und ja das ganze
werde ich jetzt damit toppen einfach
schön rustikal darĂŒber verteilen Freunde
alternativ könnt ihr natĂŒrlich Sesam
nehmen FE ich auch extrem hier einfach
machen wir auch einen oder ein bagett
mit Sesam so schaut das ganze jetzt aus
den Ofen habe ich schon vorgeheizt auf
190° Ober und Unterhitze und das ganze
wird gebacken fĂŒr 17 bis 21 Minuten

mit
viel dampfbacken

auf jeden Fall mĂŒssen wir jetzt noch
eine Sache machen und zwar damit sie
besonders weich werden werden wir jetzt
die Subs mit etwas flĂŒssiger Butter
bestreichen zack okay doki das hat
wunderbar funktioniert jetzt nimmt euch
ein KĂŒchentuch und lst das ganze noch
mal 15 Minuten abgedeckt ruhen ch werden
sie noch mal weicher versprochen und
danach schauen wir uns den Dinger mal
genau an okay unsere Subs sind jetzt
vollstĂ€ndig abgekĂŒhlt hört ihr das wie
luftig die sind und die springen einfach
komplett zurĂŒck genauso wie es sein soll
ich hÀtte gesagt dass wir jetzt
gemeinsam im Anschnitt machen und ich
sag schon vorab ganz wichtig bei so
einem guten Sub ist dass er reisfest ist
ja also wenn wir das ganze spĂ€ter fĂŒllen
dann möchten wir ein Sandwich haben und
einfach kein kein belegtes Brötchen
sondern einen geilen sub
