through the tour today

okay everyone come please follow me

the first step of our bread making
process
is the ingredient preparation in this
big containers
is where the ingredients are being
stored like
milk flour sugar and whey powder
and in this station sponge mixing or the
making of the base doll
is done where half of the ingredients
of the bread is being mixed after the
sponge is done
it will be transferred in big containers
to be put into a cold room for some
hours
for the fermentation process this is
done
to enhance even more the texture
aroma and flavor of the bread from the
fermentation room
the sponge is mixed with the remaining
half of the ingredients
to come up with a final doll then the
dough
is transferred to the doll throw and to
make
up line in the makeup line
the doll undergoes four processes
dividing rounding intermediate coofing
and molding first dividing the dot
is transferred via the thrall elevators
to the divider here
the dough is cut into the required size
and weight of a lot this results in an
accurately scaled and consistent doll
piece
second rounding the dog pieces are
rounded into a ball with smooth
surface this is done on a conical
equipment
called the rounder then the doll pieces
pass through the checkwear
to ensure correct way of every law and
third
intermediate proofing here the way
though pieces
are transferred to individual baskets in
the intermediate proofer
this allow the doll to rest so it will
go through the molding rollers
without tearing lastly molding
though pieces are flattened rolled into
a cylindrical
shape sealed and cut into its final form
after this process the dough will be
twisted
and placed in the baking pans
the baking pans travel through a
multi-level
swing tray allowing the dough
to rise inside the pan after final
proofing
the baking pans are automatically
covered
with a lid using a robot
meanwhile empty baking pans go through a
tornado pan cleaner
to clear the residues then passes
through pan greasing station where they
spray
automatically with a high specialized
baking
oil baking is done in the oven with
indirect
firing system which is heated by
environment friendly
liquefied petroleum gas the computer
ensures that he is well distributed in a
30 meter long tunnel oven
with a series of five oven chambers
with ranging temperatures this result
is consistent baking in all loads
after baking the metal leads are
automatically removed
and stored for cooling in a lid stacker
area

now the bread is loosened from each pan
by air burst
blown on the edges between the bread and
the
pan the bread
is then taken out of the baking pans
using gentle suction that automatically
lifts the bread out of the pan into
conveyor
untouched by human hands meanwhile
the hot baking pans pass through the pan
coolers
then are placed in the pan storage area
baked hot breads are conveyed upwards
in the first cooling tower then cross
a bridge at the top and conveyed
downwards on the second tower
this process allows the bread to cool
down to the desired
temperature before slicing and bagging
each law passes through the tumbling
station where
all four sides of the loft are checked
here the highly trained checkers
perform the final quality visual
inspection per loft this ensures that
only bread
that meets gardenia's high quality
standards
are slice and pack now
the lawns are feed into a high speed
band slicer
where these are automatically cut to the
desired
thickness the brands are then pushed
inside bags automatically by a
state-of-the-art
bagger and touch by hands finally to
seal in freshness
gardenia uses color-coded g-lock
imprinted with a batch and traceable
number
