week There's no such thing as a bad
chicken wing in Buffalo I've never had a
bad chicken wing never had a bad chicken
wing we used to get 10-cent Wings H
medium mile hot medium mile you're
calling and there was always the idiot
at the table you can't make them hot
enough and then everybody had to pay for
that I've seen that in real life
you can't make him H enough I graduate
college I moved to New York City to
become a chicken wing cameram man that
was the plan all along that was the plan
I parted the first time and I'm going to
go make my name in Wings you see my name
up in Wing
lights uh how does it feel having uh me
be a part of hot ones is it's cool we're
very proud of that how you've uh
succeeded in
that a good friend of mine his son is
just as goofy as he is and he says well
now I know my son could be an idiot and
get paid for it that is
true but yeah I was a little nervous at
first yeah yeah this is what he's going
to stake his claim to chicken wings
chicken wings hey how long are you
gracing us with your presence it's a a
quick Wing trip so we're on a mission to
find new Wing spots old Wing spots I I
want to spread the gospel of Buffalo to
the world it's my Heritage you know this
is yeah my culture is the buffalo
chicken wing but first we Feast you know
that's well we're certainly glad to see
you nice to see I have to go
though it's a nice
idea energized by some quality family
time I wanted to go deeper so I made
plans to meet up with an expert food
journalist Andrew Garo to break down
what a true chicken wing is but with an
hour to kill before open I decided to
stop at a bar to see what the locals
were up to
too first question do you know who camer
guy Bill is no no excuse me gentlemen oh
I'm sorry go for it blue cheese or Ranch
blue cheese blue cheese blue cheese blue
cheese of course it's a Birthright to
die on this hill first of all but blue
cheese has its spot with us it's perfect
for a wing and I'll leave ranch at a
veggie tray ranch or blue cheese ranch
ranch oh my God I I don't know what to
do uh just be an adult eat some blue
cheese Los Angeles eie Pennsylvania
you go you know miles out you're not
getting these chicken wings it's a thing
it's a point of Pride it was at this
moment I thought to myself these are my
people but all that talking got me
hungry it was time to eat at duffs a
legendary spot that's been serving Wings
since 69 President Obama even ate Here
If These Wings were good enough for a
president they're certainly good enough
for a camera guy like me oh hello mhm
mhm for the last 30 years this is what I
got double order of Wings medium sauce
yeah let's rip and dip let's go so what
are you doing like a
pro look at that did you see that did
you get that on camera see I do the I do
the break method and then you get two
for the price of
one don't try this at home kids I don't
can you hear this how crispy it
is it's the heat where you want to go
back for more and more and more and I'm
sweating a little bit but it's delicious
like so many other genius dishes in the
world it's acid against fat Heat against
richness and you can get your cooling
Dairy it's like a do-it-yourself fun
package choose your adventure Choose
Your Own Adventure what makes a chicken
wing a buffalo chicken it is the two
fatter joints of the chicken wing tipped
discarded disjointed deep fried until
crispy and then toss in a sauce a caned
vinegar sauce like FRS and fat so butter
or margarine and the various spice
levels are determined by the fat to hot
sauce ratio preferably served with blue
cheese dressing and celery and carrots
if you want to do something else God
bless you there are a million spins that
are all delicious but that is the
definition of the buffalo wing in the
pantheon of all these buffalo chicken
wing restaurants where does Duff's
cemented some it has been one of the
most
consistent largely because of a guy
named Ron Duff he worked here for 75
years Ron Duff knew this place so well
that he could come in hear a bearing in
the ice maker that was going to go in 2
weeks and he would call the equipment
guy cuz he knew he would need it that
sort of consistency elevates a place
that's serving a dish that a lot of
people in this town are making to a
place people come back to I got celery I
got blue cheese I'm happy and I'm 16y
old again and I found the best thing in
the world to
eat for stop two I headed down the road
to Wing nuts I'm pretty sure they
sourced their Behemoth wings from a
prehistoric
pterodactyl but I haven't been able to
prove it to help me tackle a plate of
these Giants I've called in a human
giant NFL Pro Bowl tight end for the
Buffalo Bills Dawson Knox come on baby
so here we have the Wingnut signature
and this is the hot Cajun garlic wo all
right this is my first time actually in
Wing nuts I'm got to take out I don't
know 15 times before what is your ideal
chicken man I'm a big flat guy it's got
to have a nice balance of spice with
some sweetness sounds like these are
going to be perfect you guys go crazy
with the spice I mean I don't know if
that's for me but I know this is
probably going to be like cursing in
Buffalo but I used to be a ranch guy
okay but first time I had blue cheese up
here fell love with blue cheese well I
saw an interview with Dean Dawkins and
he said when he signed his deal that he
legally had to give up Ranch and switch
cheese so it's part of all our contracts
it's kind of like in the fine print you
can't ever do Ranch again you said you
have an art style for eating a flat what
is art style yeah what is the perfect
way to eat a flat you got a a special
move what do you do yeah I mean I
learned this up here trigger the trade
so you just take it push it down a
little bit you just you got to get some
good BCI on there dunk it one
bite there you go okay Gosh Look Bo
you're natural you must be from here yes
born and
raised that's fantastic signature oh my
gosh that's
unreal the ratio of the little bit of
crunch perfect amount of sauce they've
got it down to a science here I think
where are you getting the wing this big
anywhere that's right this is insane can
you hear the crunch in the mic yeah get
really
close there you go
you're originally from the suburbs of
Nashville over the years it feels like
you fully embraced the Buffalo lifestyle
you're buffalonian what is it about this
city the people the food that makes you
love it so much when I got drafted here
I knew nothing about Buffalo um my first
thought was like oh it's going to be in
New York close to New York City um after
being here I mean going on my sixth year
it really feels like a family and I know
it's called the city of good neighbors
and that's not like an over an
exaggeration um everyone here is so nice
a couple years we we got a crazy
snowstorm and it was on a Saturday so we
were supposed to travel to the game that
day when I woke up and I had like eight
or nine of my neighbors shoveling out my
driveway for me and I got nothing I
asked for um and I go outside to start
helping they're like no no no you go
back inside like we got it you just get
a cup of coffee with yeah um just so
overly kind and that's something I'm
super excited for this this next draft
class too like they might not know much
about Buffalo but once you get here it
feels like home I've actually had like
15 wings the day of a game sometimes no
better pregame in Buffalo yeah this is
probably the greatest day of my life so
I want to I want to thank you for coming
and eating wings until the Super Bowl
until the Super
Bowl for my next spot I ventured off the
beaten path into South Buffalo where the
Guinness floweth and the bag pipes blow
it here at Doc Sullivan they cook up a
special kind of wing known for its
legendary Secret Sauce to help guide me
through my first visit I called in tick
tocker Chef Alex dispense better known
as sub Chef I'm feeling lucky Alex thank
you so much for joining me got it man
we're here at Doc Sullivan I'm ashamed
to admit as a buffalonian I've never
been here but you've been here before
for sure lived in South Buffalo for some
time and this is a spot you have to you
have to visit once or twice I'm glad I'm
here the first time that's right South
Buffalo is just really one of those
areas it's it's a lot of it's almost
like a mini Boston I don't want to say
it too loud it's an Irish kind of
community it's it's a really cool spot
and this place really just fits right in
can you explain to the viewers what
Smitty style wings are it was basically
very close to a traditional buffalo wing
but it just has a little bit of a
seasoning kick to it and we also got the
beef on W Wings which I'm also very
excited to try yeah let's take a look
what do we
got I mean
I do smell something a little different
there something you might be smelling
this though maybe that the car seeds
let's start with the SMY style I'm a bit
of a flat guy you go
for it's really good it's awesome you
bite in and it buffalo wing but there's
a little yeah I can't place what it is
it's still got that vinegary bite of a
buffalo wing but it's got a a new flavor
and I can't place it some say it's
cinnamon others say it's nutmeg or
celery seed but I think it's pure
buffalonian salt of the earth it's a
family secret on the menu it
says so these are the doc Sullivan's
beef on wack Wings everyone's been
talking about them for those who don't
know beef on wack is also a buffalo
staple you got your uh roast beef right
mhm roll with kimick and salt and a
bunch of horseradish that's right they
did this to a chicken wing I don't know
if you can see can you see who's got it
you got it the Kim you got the
salt these rock this is just a beef on
yeah these Rock these Rock they're not
it tastes nothing like a buffalo wi it's
it's not supposed to but these Rock the
Hors Rider sauce is insane yeah that's
great what do you have to say to Buffalo
chicken wing purists who say that a
buffalo chicken wing can only be a
crispy wing with some sort of butter
Frank's Red Hot and that's it yeah grow
up
grow up I'll never grow up I'm camera
guy Bill yeah this is what he's going to
stake his claim to chicken wings chicken
wings on that note I texted my oldest
friend Zach to do what we do best Crush
some wings this time I'm headed to
barbill and East Aurora where my newest
friend Buffalo radio DJ Shy Guy sha is
going to wax poetic about these hand
painted wings
this is my first time here what about
you guys been here a many times before
um I know a lot of people who pick this
place as their best overall for wings I
think like the appeal of this place is
number one it's kind of in an area
that's outside of the city a lot of
people know that some of the great wings
come from these areas that you don't
even realize and more importantly the
Buffalo Bills like are obsessed with
this place you hear the Buffalo Bills
talking about it enough know it's time
to try it so that's what I ran with how
it going guys kind of hot for you right
there
the tank and honey butter right there
she's
got you guys
enjoy so we got your traditional buffalo
hot and here we have the Cajun honey
butter
barbecue let's duum right in no after
you no I I I feel like for me the first
four or five wings I like the sauce on
its own you get a better flavor for it
and then you know I should I should have
went pure again I didn't do
it this I will say it's almost got like
a little a little bit of sweetness to it
without being overpowering just
fantastic on the wings of death scale I
would give this a 6 out of 10 it is a
pleasant heat it's lingering tip of the
tongue sides of the mouth back of the
throat next up on our magical Wing tour
is The Haun honey butter barbecue now
allegedly these are Josh Allen from the
Buffalo Bill's favorite Wings in Buffalo
this flavor from this place these are
goat Wings the goat of all
time and you can see it has more flavor
to it you see how on the back of the
wing there's no Cajun but the top is
where the spice is that's you can tell
you can tell the attention that they put
into this bottom top with those Cajun
spices makes all the
difference this is an excellent crispy
Wing to have the crispiness of the wing
not made soggy by the sauce a little bit
of texture from that cage and like we
talked about inside of the meat is Juicy
there's no dryness here I mean I can
still see the steam coming off of it so
you know they fresh out of the fryer
can't go wrong it's an art form to try
to get it Saucy and crispy at the same
time you hear the crunch we've been to a
lot of places on this Wing tour a lot of
people who care about wings and do
things different but here they do
something very different is they
individually paintbrush each wing with
more sauce when they're done it's about
as Artisan as a wing can get in a town
like Buffalo yeah yeah this whole
episode has been about wings but another
thing Buffalo Prides itself on is beef
on wack uh bar bill has one of the top
beef unws in the city salty beefy roll
make it a little bit more Buffalo go
bills go
bills Cheers Cheers
[Music]
Cheers M right off the bat I got that
one oh yeah this the back of naal what
is it about this city that makes it one
of the greatest food cities in the
country cuz I feel like it doesn't get
enough credit you're right basically who
we are as people that live in Buffalo or
this rust Bel City you know we're not a
bougie City that's on the up and coming
we've been forgotten in the 60s and the
70s but yet we still hold together and
we find comfort food that we Bond over
the other things Buffalo is famous for
is snow and um losing sports teams and
I'll tell you there's nothing better
after a after a Sabers loss when you're
snowed in than some really high calorie
food and there you have it the camera
guy bill buffalo wing
tour we did it all from Old School to
new school with friends family and my
real family as much as the chicken wing
put the city on the map it would be
nothing without the unson heroes who
Brave the coldest of winners and scream
go bills at the top of their lungs go
bills go bills go bills go bills go
bills I hope all of you watching see
that and make the Trek up to our snowy
corner of West Western New York hi I'm
Rob I've lived in Buffalo for about 40
