vi dico temperatura ambiente sui 18 20
gr di burro più zucchero più nuova e poi

da frigo ho tirato fuori da un pochino
burro più farina si fa impermeabilizzare

facendo il metodo sabbiato abbiamo una

friabile perché non ha sviluppato
glutine anche più fredda quindi di

frolla veramente molto che gestisce
meglio l'umidità perché siccome noi
abbiamo impermeabilizzato col burro la
farina
ovviamente la farina sarai per me
impermeabilizzata da queste particelle
di burro che gestirà meglio l'umidità ok
poi bisogna vedere se abbiamo utilizzato
zucchero a velo zucchero semolato
eccetera ad ogni modo passa fra milano e
questa ora
questa passa palla va bene per fare

per cento perché le uova andranno

asciuga ok se vuoi e togliete pari peso

quindi bisogna stare attenti col backing
magari un dice che bello falvio l'area
ne metto tanto no non va bene metterne
tanto che
quindi in linea generale e poi ci sono
alti ingredienti ovviamente ci sono le
paste di frutta secca che bisogna attimo
bilanciare ci sono altre cose da vedere
perché dobbiamo vedere poi punti
diffusione ovviamente se mettiamo ad
esempio della pasta di nocciole al posto
del burro
bisogna mettere quanta metterne perché
si abbassa al punto di fusione quindi
diventa più difficile da lavorare

ho visto dagli otto grammi per chilo di
farina quindi dei due agli otto grammi

esempio come il sabre breton classico

solito sono pastefrolle che sviluppano
tanto che hanno tanto back intanto sale
e li si può aumentare il sale anche fino
a 20 grammi per chilo anche di più sono
basse fra le molto salate ok però
generalmente in italia noi abbiamo dai
24 c 45 grammi di solito alla media 45 8
grammi di sale il sale alla funzione non
solo di dare sapidità
ma la funzione di assorbimento dei
liquidi e quindi è molto importante
anche perché è un dolce senza sale
non è proprio il massimo un po di sale
nel dolce ci vuole non c'è
quindi diciamo che questa piccola
masterclass era per farti capire un
attimino la pasta frolla avrai già
capito da te che non è poi così banale
c'è un mondo dietro mondo sulle funzioni
degli ingredienti se utilizziamo più
burro quale burro se utilizziamo per
esempio lo zucchero a velo cambia che
utilizza lo zucchero semolato il tipo di
farina il sale il cacao il back in le
paste oleose e veramente un mondo molto
molto complesso però molto interessante
soprattutto per chi parte che vuole
capire un po di più al posto di copiare
