What's up guys? Sanjyot Keer here Welcome to YFL.

play00:12

Today I'm making 2 types of Garlic Bread Sticks.

play00:15

Now, usually we order them from market, however, they turn out amazing even at home, if you've never tried before.

play00:22

& today is going to be extra special coz for my viewers without OTG or microwave oven,

play00:30

they usually complain that how do we make these things,

play00:33

So, for you all, I'm going to show a really simple method using a pressure cooker.

play00:39

Along with that I'll make a batch in oven too, for you to know how that is done.

play00:43

It's a very interesting recipe. Firstly, let's prep for the dough for Garlic Bread Sticks.

play00:49

Add 300 ml lukewarm water to a bowl,

play00:54

along with it, add 1 tsp honey or sugar,

play00:56

& I'm adding 7 grams or 1.5 tsp active dry yeast.

play01:00

After adding it mix it well until the yeast dissolves nicely.

play01:06

Now, cover it & let it rest for 5 minutes,

play01:09

so that your yeast can get activated

play01:12

If you are using instant dried yeast, then you can avoid this 5 minute resting period.

play01:18

Now, you can see, the yeast is rested & it has formed bubbles on top, which indicates that our yeast is activated.

play01:24

Now, in a bowl, add 500 grams refined flour & 1 tsp salt & mix well.

play01:30

After mixing it, make a well in the centre.

play01:33

Now add the water containing yeast to this.

play01:37

After adding water containing yeast, mix both together until the water is incorporated in the dough.

play01:46

Once your dough comes together like this, then transfer it to a platform,

play01:52

After transferring to a platform, pour 1 tbsp olive oil on it.

play01:56

Now, you have to knead this dough nicely for 10-12 minutes,

play02:00

until it is smooth & stretchy.

play02:04

You can see, that the dough is quite sticky right now, but within 10-12 minutes, it will become soft,

play02:11

it'll be non-sticky & your dough will be perfect.

play02:16

Like this hold one edge like this & stretch the other end with your hand like so,

play02:21

& knead it really well for 10-12 minutes.

play02:23

By doing so, gluten will form in your dough.

play02:26

Gluten is a protein in the refined flour, due to which your dough will be stretchy & thus your garlic bread will be perfect.

play02:32

Now, you can see, I've knead the dough really well. It's not sticky at all. It's soft & smooth.

play02:39

At this stage, you have to make this dough into a ball, so make a ball like this.

play02:45

After that, in a bowl, drizzle some oil, place the dough & then add some more oil on top.

play02:53

Then cover it nicely with a cling wrap

play02:56

& rest this dough in a warm place for an hour or until it doubles in size.

play03:07

After an hour, you can see that this dough is risen well & doubled in size,

play03:12

Now, you have to uncover it & punch it to remove all the gas from within

play03:17

Then, transfer it to a platform,

play03:20

After transferring it to the platform, you have to divide it in 4 equal parts.

play03:26

If you want, you can even use a weighing scale & prepare portions of around 200 grams.

play03:32

Now, I've divided them in 4 parts,

play03:35

Now, you have to tuck it nicely & make a tight dough ball.

play03:39

So roll it nicely in your hand or on your platform to get a smooth dough ball.

play03:45

& then tuck in at bottom to form a tight dough ball.

play03:50

Once your dough balls are ready like this, then dust some flour on a baking tray,

play03:57

then place these dough balls, slightly away from each other.

play04:01

then drizzle some oil on these dough balls on top & cover it with a plastic wrap.

play04:06

Now, you have to bench-proof it, which means you have to proof it again for 15 minutes to 1/2 hour.

play04:12

Until these dough balls have risen & then you can make garlic bread from them.

play04:18

So the prep bread part of garlic bread is done.

play04:21

You have to knead the dough just like this. Lots of people find difficulty in using yeast or say why do we use it.

play04:27

Yeast is an absolute essential so that the results are good & your garlic bread turns out fluffy.

play04:33

It's not difficult or a rocket science. It's a very simple method.

play04:36

Just follow all the steps as shown & you will not face any problem.

play04:41

Now until our dough is undergoing bench proofing or 2nd proofing.

play04:45

Till then, let's make the 3 more components of this recipe.

play04:48

1st is the garlic butter, 2nd the oregano seasoning, the packets of seasoning that you save from pizza orders,

play04:53

It's very easy to make that at home, so I'll show you how to make that as well.

play04:58

& lastly, cheesy dip that we order along with garlic bread sticks, I'll also demonstrate, how to make that cheesy dip too.

play05:05

So let's make these 3 components.

play05:07

To make garlic butter, in a bowl add 4-5 tbsp melted butter,

play05:12

& 2 tbsp chopped garlic.

play05:14

Now, mix both nicely & your garlic butter is ready.

play05:22

To make oregano seasoning, add 3 tbsp oregano,

play05:25

2 tbsp garlic granules, which is coarsely ground dried garlic,

play05:29

you can substitute it with garlic powder,

play05:32

1 tsp kashmiri red chilli powder,

play05:34

1 tsp black pepper powder,

play05:36

1 tsp salt,

play05:37

1 tbsp dried basil, this is optional.

play05:40

& 1 tsp red chilli flakes.

play05:42

Mix everything well.

play05:50

You can see that your Home-made Oregano Seasoning is ready.

play05:54

To make the cheesy dip, boil water in a vessel,

play05:57

On top of the vessel, place a big heat proof bowl on it,

play06:00

Now, to this add 150 grams processed cheese,

play06:03

1 tbsp butter,

play06:05

& add 100 ml milk to it.

play06:07

Now, keep whisking it, until your cheesy dip is smooth,

play06:12

& until your cheese melts completely, to give a smooth cheesy dip.

play06:18

Cooking something with boiling water underneath like this is called Double Boiler method of Bain Marie technique

play06:23

Instead, you can even use a microwave to melt cheese & make the cheesy sauce, easily.

play06:30

You can see, our cheesy dip is smooth, transfer it to a bowl, & our Home made Cheesy Dip is ready.

play06:40

Now, 30 minutes of bench-proofing is done & you can see that these dough balls have risen,

play06:45

Now, let's see how to shape them into garlic bread.

play06:49

So, I'm going to make 2 types of Garlic Bread. Firstly, I'm making the simplest one,

play06:54

& I'll cook it in a cooker,

play06:56

& then we'll make a Stuffed Garlic Bread, stuffed with pizza sauce, topping & cheese, etc.

play07:01

I'll make that version of garlic bread in an oven.

play07:04

So firstly, let's see, how to make a simple Garlic Bread in a pressure cooker.

play07:09

To make garlic bread in a pressure cooker, take a large pressure cooker,

play07:14

& then remove it's rubber gasket on lid & the whistle. That is quite important.

play07:19

After that, to give some height to the vessel while cooking the garlic bread, I'm using a ring here.

play07:25

You can even use a stand, that you use in a steamer & place it inside like this.

play07:30

Now to place the garlic bread, use a plate like this. You can use any plate here.

play07:35

Make sure that the plate fits in the cooker, & you can see that it's fitting in perfectly.

play07:40

Now, remove the lid, cover the pressure cooker & let it preheat for 5 minutes on high flame.

play07:47

& let's shape the garlic bread, until the cooker is preheating.

play07:52

Now, carefully lift a dough ball in your hands,

play07:56

then sprinkle some dry flour on the platform & place this dough ball inverted like this.

play08:01

After the dry flour coats the inverted side, then flip it back again,

play08:06

then, gently press this dough ball & continue to flatten it,

play08:11

Be careful, not to press a lot otherwise all the incorporated air in the dough will escape.

play08:15

Like this prepare a round thick disc.

play08:19

After that, take some garlic butter & apply it in half semicircle

play08:26

After applying garlic butter, sprinkle oregano seasoning nicely,

play08:32

After that, you have to fold it like this, So fold it into a semi-circle.

play08:38

Once your semi circle is ready, then press the edges to seal them,

play08:44

So, press like this with your fingers to seal the entire garlic bread.

play08:49

Now, what you have to do is take a plate & apply some garlic butter on it,

play08:54

& sprinkle some oregano seasoning on top,

play08:58

& then pick this garlic bread & place it on the plate.

play09:02

Now, you have to cut them. So take a knife & make 1-1.5 cm cuts,

play09:11

You can see that I'm not cutting this bread through & through, but stopping at the base.

play09:16

Place all the cuts just like that.

play09:18

After giving the cuts, you've apply garlic butter on it. Apply garlic butter on it nicely.

play09:24

& then sprinkle oregano seasoning on the top.

play09:27

After you've sprinkled the oregano seasoning, then your garlic bread is ready to be cooked.

play09:35

So open the lid of pressure cooker. Your cooker will have been preheated.

play09:39

Now, using tongs, you have to carefully place this plate into the pressure cooker.

play09:45

Be careful not to burn your hands. The cooker will be really hot.

play09:48

Once you've placed the garlic bread, cover the lid,

play09:52

After putting the lid on, you have to cook this bread on medium low flame for 10 minutes.

play09:58

within 10 minutes, your garlic bread will be perfectly cooked.

play10:01

The actual time can vary a little bit depending on your flame & cooker.

play10:06

So cook this garlic bread until it turns light golden brown in colour.

play10:12

It's been 10 minutes. Let's see how our Garlic Bread is doing.

play10:16

So you can see, our Garlic Bread has nicely risen,

play10:20

& it's light golden brown & crispy from top,

play10:23

At this stage, carefully, take your garlic bread out, & your Garlic Bread ready to serve.

play10:41

So you saw, how easy it is to make Garlic Bread. I made it in a cooker, without adding salt layer or anything like that.

play10:47

With a very simple method, our Garlic Bread is ready & it's a joy to eat it with cheesy dip.

play10:52

Now, I'm going to make the second version, which is like a Calzone, with pizza sauce, toppings & cheese.

play10:59

Let's see how that type of garlic bread is made. & I'm going to cook this Garlic Bread in an oven.

play11:03

You can cook it in a cooker too, that's fine as well.

play11:06

Let's see how this Garlic Bread is made.

play11:08

Now, same as before, take a dough ball, sprinkle some flour on platform & place the dough ball inverted.

play11:15

Then flip it & while patting with your hands make it into a thick disc.

play11:22

After that apply garlic butter on 1 side & follow it up with pizza sauce.

play11:32

after that, add mozzarella cheese on it.

play11:35

After adding the cheese, you can add toppings of your choice, I'm adding some capsicum, onion & sweet corn here.

play11:44

& also sprinkle lots of oregano seasoning on this.

play11:47

After adding the seasoning, fold it into a semi circle like this,

play11:53

& then seal all it's edges nicely.

play11:56

After sealing, take a plate, apply some garlic butter on it, sprinkle some oregano seasoning,

play12:02

& then place the bread on it. After placing the bread on, make cuts onto the bread.

play12:07

& again on top, apply some more garlic butter & sprinkle oregano seasoning.

play12:13

& your Garlic Bread is ready for baking.

play12:15

Now, I'm baking this garlic bread in a 270-280 degree Celsius preheated oven,

play12:20

for approximately 7-8 minutes.

play12:22

Keep it on the highest setting of your oven, like even if it's 250, then keep it at that.

play12:28

& you have to bake this garlic bread until it's light golden brown.

play12:32

& just like I mentioned earlier, you can even cook this in an oven.

play12:36

Now, you can see, our Garlic Bread is perfectly baked.

play12:40

Now, let's serve it YFL style...

play13:13

So, now using this recipe, you can easily make Garlic Bread at home,

play13:18
