the food that we're eating it's also
important to know that there are many
chemicals or molecules in our
environment that make us more prone to
cancer for example pfas or polyfluoro
alkyl substances are a class of more
than 5 000 human-made molecules found in
a variety of everyday products including
plastic non-stick cookware and More in
certain areas Water Supplies have been
contaminated with these pfas and so
drinking tap water in these regions is
one of the most common means of exposure
research currently suggests that pfas
are closely linked to a heightened risk
of kidney and testicular cancer as well
as endocrine complications that's why
pfas is they're also known as obesogens
and endocrine disruptor molecules but
what about the processed food itself but
what about the highly processed food
itself what are the four main reasons as
to why that's leading to how higher
rates of cancer main reason number one
is that highly processed food contains
lots of refined carbohydrates and or
added sugar and that's not good as that
makes cells more likely to incur genetic
mutations that not only lead to cancer
but promote it every day the cells of
our body incur mutations in DNA this is
how cancer starts and that's what's
called cancer initiation but our immune
system fixes those mutations before
things spiral out of control that's
spiraling out of control is called
cancer promotion and that's the real
issue because that's how it spreads and
grows and guess what highly processed
food does it feeds those mutated cells
exactly what they need to thrive now
over the last several decades as we've
generally eaten more and more processed
food with more and more added sugar the
incidence of obesity related cancers has
gone up think things like colon cancer
kidney cancer pancreatic cancer and even
liver cancer especially for those who
are aged in that 30 to 50 age bracket so
how is it that eating highly process
food like dominoes Subways Doritos Oreos
actually uniquely feeds the growth of
the cancer cells well the main culprit
is the added sugar which specifically
supplies the backbone for the structural
elements that allow the cancer cells to
divide and conquer for example the
ribose molecule comes from sugar ribose
is what makes RNA and deoxyribose is
what makes DNA and if you're a cancer
cell that is dividing and growing that
means you need a lot of DNA and a lot of
RNA but that's only part of the story
cancer cells import 200 times the amount
of glucose compared to normal cells your
cells contain an enzyme called pi3
kinase which opens the glucose
floodgates of the cell if the cell were
to open these glucose floodgates there
would be so much glucose that can be
used to fuel the cell without needing
mitochondria or oxygen and this is why
it's no coincidence that cancer cells
and fetal cells they both have rapid
growth and they have high levels of this
pi3 kinase enzyme so some very smart
scientists asked themselves the question
well then what if we could come up with
a medication that blocks pi3 kinase
because that might actually stop cancer
and so came the development of pi3
kinase Inhibitors in fact some
scientists found that if you first cut
down on insulin signaling by reducing
the amount of dietary sugar in refined
carbs then that pa3 kinase Inhibitors
they become much more effective insulin
drives cancer cell growth because it's
how the glucose gets into the cell in
the first place you can think of insulin
as being the key to the door in pi3
kinase determines how wide you can swing
that door open insulin and pi3 kinase
they work in unison to flood the cell
with glucose but refined carbohydrates
and added sugar are not the only reasons
that highly processed food increases the
cancer risk the lack of fiber is a big
contributor as well so main reason
number two is that highly processed food
is low in fiber most people on average
consume about 10 to 15 grams of fiber
per day but the ideal is 30 grams per
day and why is fiber so important when
it comes to preventing cancer especially
colon cancer for one fiber in effect
counteracts the effects of sugar
insoluble fiber it combines with the
soluble fiber to form this gel on the
inside of the intestine specifically in
the duodenum which reduces intestinal
absorption by up to 25 percent so this
means slower digestion and absorption of
that Sugar leading to a lower and a
slower insulin release from the pancreas
thinsoluble fiber also acts as a mild
abrasive in the Lumen of the colon which
dislodges and sloughs off those old dead
cells which are the cells that
eventually lead to cancer so basically
the insoluble fiber sweeps away those
pre-cancer cells thus reducing the risk
just know that 99 of the bread that you
see in the grocery store claims to have
a lot of fiber but that's soluble fiber
that they add back to it after that
wheat has already been processed you
can't add back the insoluble fiber the
brand part of the original wheat kernel
it's gone forever so an example of
unprocessed bread would be something
like Ezekiel Bread which has to be kept
refrigerated to keep it from spoiling

nitrosamines so let me ask you is the
meat that you eat if you do eat meat is
it processed or unprocessed it's
estimated that for every 50 grams of
processed meat consumed per day the risk
of colorectal cancer Rises by about 16
percent long-term consumption of
processed Meats is strongly correlated
with an increased risk of colon cancer
especially for the left-sided part of
the colon so the left side of tumors
mainly because processed Meats contain
nitrates and nitrites nitrates and
nitrites are the preservatives in cured
meats like bacon salami sausages
pepperoni hot dogs they prolong a food's
shelf life and they give it an
attractive Hue but here's the problem
nitrates turn into nitrites which react
with amino acids to form nitrosamines
which then react with nitrogen to form
nitroso ureas nitroso ureas are among
the most potent carcinogens in existence
and they're associated with virtually
every cancer of the GI tract not just
the colon this is why nitrates and
nitrites are classified as Group 1
carcinogens placing these Foods in the
same risk category for cancer as
cigarettes and alcohol and even asbestos

most food you buy nowadays does not have
trans fats even the highly processed
food but are you secretly eating them
without knowing it and can that lead to
cancer well you can inadvertently make
trans fats on your own right on your
stovetop so let's say you cook with an
unsaturated fat like olive oil which is
healthy right but if that olive oil is
heated past its smoking point which is
around 350 degrees Fahrenheit guess what
happens that olive oil molecule is
easily converted from a cyst to a trans
fat there's actually a 2019 study where
they fried some falafel in canola oil at
these very very high temperatures and
then they mix that oil into rat feed the
rats that were fed the fried canola oil
diets had a higher incidence of gut
inflammation and colon tumors compared
to the rats who ate canola oil that was
cooked at lower temperatures so just
know that different unsaturated fats
they have different smoking points and
be aware of the smoking point of the oil
that you're cooking with so that you
don't inadvertently convert that to a
trans fat and then there's something
called pahs which is not necessarily
processed food related but it's related
to char grilling food especially Char
grilling meats and that's something that
can lead to cancer as well which I talk
