in ausreichenden Mengen weshalb sie als

Körper sie leichter aufnehmen und
verwenden kann darüber spreche ich

weiter was sind Proteine und welche
Funktion haben sie Proteine werden auch
als Bausteine des Lebens ja bezeichnet
weil sie im Körper viele verschiedene
Aufgaben haben nicht nur Muskelaufbau
sondern auch ganz wie z für unsere
Gehirn und sie bestehen aus mehren
sogenannt proteinogenen Aminosäuren das
sind 21 Aminosäuren aus denen je nach
Kombination ca 100.000 verschiedene
Proteine gebildet werden können und das
machen sie indem sie eine Kette bilden
und ist die Kette länger als 100
Aminosäuren so Kette Kette spricht man
von einem Protein bei kleineren Ketten
spricht man von sogen an Peptiden und
neun dieser Aminosäuren die sind
essentiell das heißt ihr Körper kann sie
nicht selbst herstellen und sie müssen
über die Nahrung aufgenommen werden und
vor allem sind die in den tierischen
Proteinen um immer genug Nachschub zu
haben sollten Sie täglich eins bis 1,5 g
pro Kilogramm Körpergewicht an Eiweiß zu
sich nehmen ich weiß manche Quellen
manche Ärzte sagen nur 0,8 g pro
Kilogramm Körpergewicht aber das ist
natürlich auch immer von ihrer
persönlichen Situation abhängig und
glauben Sie mir mit ein 5 g pro
Kilogramm Körpergewicht passiert nichts
sofern sie normal gesund sind je nach
Lebenssituation kann der Wert natürlich
variieren wer viel und oft Sport macht
da wird empfohlen bis zu 2 g pro
Kilogramm Körpergewicht und das heißt
pro Tag dauerhaft und jetzt mal ganz
ehrlich wenn sie 70 kg wiegen 140 g
Proteine pro Tag wissen Sie wie viel das
ist nur mal hier in dieser Thunfischdose
da sind nur 27 g Proteine drin wie viel
tunfstose muss man da pro essen also
deshalb machen sie sich nicht Gedanken
darum genau aufs Gramm orientieren sich
daran eine proteinreiche Ernährung mehr
dazu aber gleich auch noch welche
Aufgaben haben die Proteine jetzt im
Körper ganz wichtig ist z.B ihre
strukturelle Funktion was damit gemeint
Proteine sind wesentliche Bestandteile
von Zellmembran von Haaren Nägeln
Bindegewebe und wahrscheinlich haben
schon mal gehört kollagen ist
beispielsweise ein bekanntes
strukturelles Protein das in Knochen
sehen Haut vorkommt und ihnen Festigkeit
verleiht die meisten kollagenprodukte
sind tierisch muss man auch wissen und
natürlich auch die Muskelkontraktion für

Referenz für eine biologische Wertigkeit
von 100% hat man hier das Hühnerei
festgelegt je nachdem ob der Wert eines
Lebensmittels unter oder sogar über 100%
liegt spricht man davon dass es
schlechter bzw besser verwertet wird
jedoch gibt es auch Kritik an der
biologischen Wertigkeit so spiegelt es
nämlich nicht die Qualität eines
Lebensmittels wieder das muss man auch
wissen hohe biologische Wertigkeit viel
prot
aber vielleicht schlechte Qualität es
gibt ja noch mehr als nur Proteine
andere wichtige mikronehrstoffe sind
wichtig Makronährstoffe sind wichtig die
es sonst auch noch gibt deswegen
Lebensmittel vielleicht mit einer
geringen biologischen werdigkeit können
trotzdem für die Gesundheit gut sein
sind können qualitativ gutes
Lebensmittel sein und da sind wir schon
hier auf der pflanzlichen Seite also
eine hohe biologische werdtigkeit
bedeutet da sind viele Aminosäuren drin
sind unserem Körper sehr ähnlich die
können gut ver arbeitet werden um damit
Muskelaufbau z.B zu machen sagt aber
nichts darüber aus ob es gut für die
Gesundheit ist die Bioverfügbarkeit kann
für Sie als hilfreiche Orientierung
dienen trotzdem möchte ich also noch mal
darauf hinweisen dass sie niemals ein
Lebensmittel allein anhand der
biologischen Wertigkeit beurteilen
sollten und jetzt noch mal kurz zum Ei
früher wurde ja gesagt ja kann man nur
so ein zwei pro Tag essen wegen
Cholesterin jetzt weiß man kann man d vi
am Tag das ist eigentlich kein Problem
trotzdem sagt die Deutsche Gesellschaft
für Ernährung man soll nur so zwei pro
Woche wird ja auch wieder heiß
diskutiert woran liegt das nicht an den
Proteinen hier drin oder so oder wei
vielleicht ein Cholesterin erhöhen kann
sondern es liegt einfach an ökologischen
Gründen bzw an der Tierhaltung das
einmal kurz dazu so und wenn man schon
bei der DGE einmal sind also Deutschen
Gesellschaft für Ernährung hinsichtlich
Fleisch als Proteinquelle gilt Qualität
für Quantität die Deutsche Gesellschaft
für Ernährung empfeht z.B nicht mehr als
300 g Fleisch bzw Wurstwaren pro Woche
das ist echt niedriger Wert ein
dauerhaft hoher Konsum dieser Produkte
näich von viel Fleisch kann zu einem
erhöhten Risiko für Herz
kreislauferkrankung führen vielleicht
auch das Krebsrisiko
erhöhen deswegen man muss es damit nicht
übertreiben und es gibt andere gute
Proteinquellen und darüber sprechen wir
jetzt letzter Punkt noch hier Thunfisch
auch gute Proteinquelle nicht mehr als
zweimal pro Woche warum wegen
Schwermetallbelastung Quecksilber etc
Eigenschaften und Vorteile von
pflanzlichen Proteinen kommen wir jetzt
mal zu den Proteinen aus pflanzlichen
Quellen und hier sind z.B Amarant Quinoa
haferbeliebte eiweißlieferen aber auch
Kichererbsen Tofu Erdnussmus es gibt
viele pflanzliche Nahrungsmittel die
gute Quellen sind Proteinquellen die
haben aber Nachteil gegenüber den
tierischen Eiweißquellen trotzdem müssen
sie sich keineswegs verstecken und sie
sind wichtig vor allem sollten Sie es
kombinieren warum sage ich jetzt kinoa
mal so als Beispiel liefert alle neuen
essentiellen Aminosäuren die der Körper
nicht selbst herstellen kann also selbst
pflanzliche Produkte können alle neuen
essentiellen Aminosäuren liefern da gibt
es nicht so viele man muss es nur wissen
wie beim Quinoa z.B kinoa ist also ein
guter pflanziger eweißlieferant darüber
hinaus enthält z.B noch viel Eisen
Magnesium Vitamin E viele Mikronährstoff
und da sieht man schon mal das ist der
Vorteil dieser pflanzlichen
Eiweißquellen im Gegensatz zu den
tierischen die sind
oftmals ärmer an anderen Mikro und
makronährstoff um es so zu sagen das ist
wichtig zu wissen neben Mikronährstoffen
enthalten viele Pflanz Lebensmittel auch
sekundäre pflanzenstof und vor allem
Ballaststoffe auch muss man mal sagen
dass z.B so ja eine biologische
Wertigkeit von ca 84% hat und damit ist
Soja etwa gleich auf mit den ja
tierischen Proteinen z.B vieler käsesort
an dem Beispiel können sie sehen also
dass es auch Ausnahmen gibt und dass es
gute pflanzliche Proteinquellen gibt man
muss es nur wissen welche Proteinquelle
ist besser mehr Details welche

reinschauen ja viele pflanzliche
Proteine lassen sich schlechter
verwerten als tierisches Eiweis das ist
einfach ein Fakt über den man nicht

tierische Eiweißquellen enthalten
bestimmte Mikronährstoffe z.B Vitamin

deswegen Menschen die sich vegan
ernähren haben ja ein B12 Mangel sollten
das supplementieren sie ahnen also

bieten Vorteile ich empfehle diese zu
kombinieren letztlich kann man sagen
tierisches lässt sich vom Körper besser
verarbeiten es gibt aber auch viele
vegan lebende Topathleten die ebenso

können Sie auch problemlos decken nur
durch diese Ernährung es geht also

Hühnerei gleichzeitig essen mit dem
Thunfisch z.B denn die Aminosäuren in
den jeweiligen Lebensmitteln können sich
gegenseitig ergänzen die Kombination z.B
aus Soja und Kartoffeln hat eine
Bioverfügbarkeit von 103 %. so ja
alleine kommt ihr auf so
84%. ein anderes Beispiel kombinieren
Sie mal ein Vollei mit Kartoffeln dann
liegt die Wertigkeit bei 136%. sie sehen
also die Kombination aus mehreren
Lebensmitteln die ist wichtig und dann
funktioniert es auch perfekt mit dem
Muskelaufbau und Sie können Ihren
Proteinbedarf optimal Decken und Sie
brauchen nicht oder weniger teure
Proteinshakes und man bezeichnet den
Effekt ja als biologischen
ergänzungswert durch die Kombination der
verschiedenen Lebensmittel optimieren
Sie also Ihr Aminosäureprofil und genau
dadurch verbessert sich die
Bioverfügbarkeit probieren Sie sich
selbst hier mal aus steigern Sie damit
die Bioverfügbarkeit je höher der Wert
ist desto effizienter kann Ihr Körper

tierischen Eiweißquellen für eine
gesunde Ernährung sie werden Ihren
täglichen Eiweißbedarf dadurch gut
decken können und zusätzlich die
Mikronährstoffe die sekundären Pflanzen
die Ballaststoffe die gerade hier drin
sind auch noch mit zu sich aufnehmen
denn es kommt letzt auf ihre Gesundheit
an und nicht darauf dass S ein dicken
Bizeps haben und machen Sie sich vor
allem nicht verrückt wenn sie mal wenig
Proteine essen sehe ich auch manchmal im
Fitnessstudio da hat er irgendwie sein
Proteinshake vergessen und macht sich
ganz verrückt und denkt oh mist jetzt
wachsen meine Muskeln nicht
Ernährungsmuster ist entscheidend
trotzdem kann es auch mal sinnvoll sein
auf Proteinpulver zurückzugreifen wann
mache ich das z.B wenn man unterwegs ist
wenn man weiß man hat wenig Zeit man
möchte eine Mahlzeit Zeit zu sich nehmen
auch erstmal gesättigt sein dann kann es
sein dass man kombiniert eine Banane ein
bisschen Proteinshake Reimer und was
mache ich noch mit rein z.B Haferkleie
damit ich auch in den Proteinshake noch
Ballaststoffe mit drin habe damit bleibt
es langänger gesättigt und ist auch
gesünder als ein puren Proteinshake zu
