Transcripts
It already has been 3 years since I've started YouTube
The seasons have passed and I've turned into full-fledged member of society from student
And from a full-fledged member of society to a part-time worker
Once you're situation changes, you're sense of values, and ethics may change too
My mind is already at it's limit and telling me
That I could even lose my identify itself
Even so, even if it's true
There is something inside him that is unchangeable
At least I believe so
And that is...
The big debt he has towards KFC, which has raised him,
The gratitude and the love
Let me summarize the last few episodes
The challenge in 2019 succeeded with a synchronization rate of 75%
I thought I stood right before the goal but I've run into a wall that couldn't be overcome by just working hard
As I tried to solve this problem I've finally decided to divided the chicken in it's 5 components to perfectly recreate it
I've even acquired the most difficult to find component, the Herb Chicken
And I've ate already so much of this palm oil
I've even attacked innocent people to get their Intervertebral disk, so that I can get closer to the perfection
The only issue remaining was the amount of the spices
Please take a close look at the final act of the KFC series
Out of the countless recipes on the internet, I will make use 3 of them based on their credibility, to recreate KFC
1. 11 herb and spices
This is what KFC say themselves
I've got this image from the official KFC homepage
It's rosemary, white pepper, black pepper, celery, garlic, pink pepper and ginger
I kind of get it, but has it really rosemary and pink pepper in it?
I never thought it would have spices like that, but since it's on their homepage
KFC wouldn't list spices that they don't actually use, would they? It's not like they are xxxx
I already got so confused by just the recipe No.1
2. The mysterious napkin
I already mentioned it in the series in 2019, but KFC used to have these napkins in some of their branches
Is it me, or does his smile really look provoking?
But since I'm not that familiar with spices, I can't tell what each of these spices is supposed to be
I've come to tell you
It's a piece of cake! Leave it to me!
As you can see there are 11 herb and spices on this napkin
3. The legendary leaked recipe
The newspaper Chicago Tribune discovered this recipe, while poring through a family scrapbook from Aunt Claudia, Sanders’ second wife
According to some sources it was used at Colonel Sanders's gas station diner
As you can see 3 new spices entered the stage, celery salt, dried mustard and paprika
I'm so confused right now
But did you notice? There is one problem with this recipe
That's right, it's No.1 the salt
Having salt among the 11 herb and spices is very unlikely
But in this case...
Who is the one lying?
Based on these uncertain conditions, I tried to solve the 11 herb and spices issue like an idiot, just like all my predecessors
One day after another, was only another battle with the spices, making curry
After a period, I even forgot why I was doing it, and foremost licked the spices after waking up
I wanna name this, the KFC syndrome
After about 3 months
All of a sudden the time has finally come
You to remind you, in my opinion I think this is the KFC recipe
It's not a recipe I found somewhere
It's not like I've been using these spice and herbs the whole time
This is just the result of my 3 years of research
That's all
garlic 1 tablespoon, ginger 2 teaspoon, onion 2 teaspoon, paprika 2 tablespoon, nutmeg 1 teaspoon, sage 1 teaspoon, oregano 1/2 teaspoon, basil 1 teaspoon, marjoram 1 teaspoon, white pepper 3 tablespoon, black pepper 1 tablespoon, sugar 1 teaspoon, salt 1 teaspoon, glutamic acid powder 70g, unsalted chicken extract powder 70g, cake flour 300g, all purpose flour 60g
All I need to do now is to use my knowledge, I've accumulated
After adding cake flour and all purpose flour 5:1, all I need is to add the spices from earlier and mix it
After coating the chicken in MED liquid, place the chicken in the bowl with flour and spices
So that the chicken doesn't get burned, raise the temperature bit by bit starting with 140°C
This chicken is the original KFC
The skin peeled off though
And this is the chicken I just deep-fried
This is...
By just looking at the color, they almost look the same, you can't tell them apart
If you only look at the color
This might be a bit too thick
Itadakimasu
I didn't fry it long enough
As you see, it's a bit raw
Cause I wanted to finish this series, I somehow tried to make it look like a success
It wasn't a bit raw, it was raw
Let's try to deep-fry the chicken a bit longer
Let's place the chicken gently in the oil
About 2 minutes have passed
Since the color looks pretty good, let's raise the temperature to 180°C for the last spurt
So that they are nice and crispy
I just deep-fried them for 2 minutes and half at 130°C,
And at 180°C for like 30 seconds
This karaage is the result, I meant fried chicken
It's wonderful, really wonderful but...
It's a bit messy though
And he lied once again
But please don't blame him
After deep-frying hundert of chicken, you just can't think straight anymore
Yes, it's okay now
Let's try again
After coating it in flour
Place it gently in the oil
Let's raise the time we deep-fry the chicken at 180°C
About 3 minutes have passed
Yeah, it looks good
OK, this took quite the time
But I'm really glad, I've reached this point
Let's eat this chicken for the last time
I've come closer to the perfect recreation of KFC compared to the last time
I've come closer...
But if somebody claims the bought KFC...
and you get this...
I wouldn't complain...
As you might have guessed
Even if they wouldn't complain, it doesn't mean that they don't have complaints and dissatisfaction
I personally think I recreated KFC about 95% at this point
If you try to copy my recipe this would probably the result
Since I already tried so many patterns, to raise the percentage I had to use that
Pressure Pots can reduce cooking times and make the ingredients much more tender than usual by using pressure just like it is named
Of course, KFC also uses pressure pots
But normal pressure pots are not made to deep-fry
Since there is the possibility that the lid flies off
Together with the very hot oil
I'm sure you can imagine what happens if it hits your skin
This curiosity may get me an injury, I have to carry for my whole life
That's why please don't copy what I'm about to do
The smell is a bit off.. The spices on the skin hardened
By learning from my past mistakes, I tired to deep-fry them for about 6 minutes
The skin got a bit too hard, and it didn't smell as good
It seems that KFC deep-fries their chicken at 180°C for about 15 minutes
But if I would do the same, it would just burn
After thinking for a while, I decided to use a cooled down chicken and deep-fry it for 7 minutes in high temperatures
And after that for 3 minutes, 10 minutes in total
Ok, it's getting pressured right now
About 7 minutes passed
Let's release the pressure, this is so scary
It looks really good
The color looks really good
Let's keep it this way for about 3 minutes
Ok, let's move it out
This chicken is too big
Alright, the chicken I just gave a try for a last time, is the chicken that got recreated the best
As you can see, the skin isn't too thick and you also can see the spice spots
And if you take an even closer look, you can see spots of the flour
The color also looks really similar to the original
Nice
Alright, let's eat it
It's tasty!
