hallo meine lieben es ist an der Zeit
für ein neues Teil in und heute haben
wir wieder einen Kaffee von DM warum
weil der letzte ganz gut ankam zumindest
das Video dazu und dann habe ich mir
gedacht gut dann machen wir das einfach
noch mal diesmal haben wir den Espresso
das letzte Mal hatten wir den Kaffee
Creme eine etwas hellere Rüstung diesmal
eben die Espresso Rüstung ich vermute
mal dass die dann entsprechend etwas
dunkler ist der Kaffee der hier drinne
steckt ist der gleiche ebenfalls ein
100% Arabica aus Peru ebenfalls
Naturland und Fairtrade zertifiziert
relativ gut nachverfolgbar von dem her
eigentlich keine schlechte Sache und
dazu auch noch recht günstig 3,95 €
Kosten 250 g das heißt wir sind bei
einem Kilopreis von knapp unter 16 € was
wirklich gerade in der heutigen Zeit
sehr günstig ist macht wahrscheinlich
dann einfach die Menge die von diesem
Kaffee produziert und abgenommen wird
dadurch kann man natürlich etwas
sparsamer kalkulieren gut was haben wir
sonst noch für Informationen eigentlich
nicht viel wir haben noch ein MHD ich
habe bei dm nachgefragt um zu erfahren
wie lange es im HD ist DM macht ein MHD
von 18 Monaten auf ihr Kaffee ja also
das MHD ist nicht reglementiert das kann
zwischen 6 und 24 Monate alles sein was
der Produzent halt so drauf schreiben
möchte das heißt das ist keine valide
Aussage darüber wie alt der Kaffee ist
in dem Fall weiß ich jetzt im 18 Monate
und weiß dass der Kaffee ungefähr 3
Monate alt ist ist jetzt so an der
Grenze zu dem was noch gut ist sage ich
jetzt mal also der Kaffee vertippt nicht
aber er verliert einfach sehr viel von
seiner Aromatik aber ihr könnt jetzt mit
diesem Wissen wenn ihr zum DM geht und
den Kaffee nachkauft könnt ihr eben auf
das MHD gucken und zurückrechnen wie alt
euer Kaffee ist und dann eben abschätzen
ob der noch was kann oder ob der einfach
schon ausgeraucht ist wunderbar ich
würde sagen wir schauen uns den Kaffee
einfach mal an und legen dann auch
gleich los bevor wir das aber tun noch
kurz ein paar Worte zu dem Equipment was
wir heute benutzen wie immer meine dies
sind ich habe für ein gentle and sweet
Profil entschieden das heißt wir Brühen
mit etwas weniger wie neuen bar Druck
das Profil geht auf maximal 7 bar Druck
ein bisschen weniger Druck hilft dabei
den Kaffee gleichmäßiger zu extrahieren
weil ich ein bisschen gröber malen kann
und dadurch ja schonendere Extraktion
wobei schon das vielleicht nicht genau
das richtige Wort aber einfach eine
gleichmäßigere Extraktion weil ich mit
niedrigeren Druck eben arbeite verzeiht
ein bisschen mehr Fehler also gerade
wenn ihr noch nicht so 100% sattelfest
seid was die ganzen Abläufe angeht macht
das vielleicht sind eure Maschinen ein
bisschen zu drosseln bei manchen
Maschinen dass das möglich die haben
dann eine Einstellschraube womit man den
Druck ein bisschen reduzieren kann bei
anderen ist es nicht möglich könnt ihr
aber ganz normal trotzdem so verwenden
das Rezept auch wie wir es jetzt heute
erarbeiten ihr müsst dann wahrscheinlich
nur ein bisschen feiner malen
aber sonst relativ übertragbar genau
ansonsten malen wir mit der nicht Zero
wie immer und viel mehr gibt's
eigentlich nichts dazu zu sagen wir
fangen an mit dem Profil mit
92°c das ist auch so die
Werkseinstellung von den allermeisten
Maschinen wir werden starten mit einer
Pre-Show 1 zu 2 das heißt ich mache 16
Gramm in mein Siebträger und möchte 32
Gramm als Ergebnis das ganze versuchen
wir in ungefähr 25 Sekunden in die Tasse
zu bringen und schauen dann eben was uns
der Kaffee liefert
gut dann schauen wir uns die Blümchen
mal an ja nicht erwartet habe sind wir
hier auf der dunklen Seite des Lebens
angelangt ist diesmal eben ein Espresso
Röstung beim letzten Mal hatten wir eine
Kaffee Creme Rüstung die ist eben heller
geröstet warum ja habe ich ein Video
erklärt ich verlinke euch mal hier oben
könnt euch angucken wie hier deutlich
dunkler das Bodenbild an sich sieht aber
trotzdem gut aus ich habe relativ wenig
Bruch drin die Bohnen sind gleichmäßig
groß ist nicht ja doch relativ
gleichmäßig also für den Preis absolut
in Ordnung wie gesagt aber halt sehr
dunkel geröstet Problem bei sehr dunklen
Rüstung ist dass der Kaffee auch
schneller altert wie bei etwas helleren
das heißt hier solltet ihr vielleicht
auch nicht ganz drei Monate warten ihr
müsst halt gucken was im Supermarkt
findet ob da was Frisches gibt und genau
ich würde sagen wir probieren jetzt
einfach mal aus und gucken was
geschmacklich rumkommt
okay wir sehen
das war flott so also wir haben gesehen
massives Channeling das sind diese
dünnen Strähle die da so manchmal raus
schießen das sind die extremste Form von
Channeling einfach ja das heißt Kaffee
bohrt sich ein Kanal durch den Kaffee
Kuchen und läuft dann das Wasser
Entschuldigung und läuft dann
überwiegend durch diesen Kanal ab hat
mir jetzt hier der Kaffee lief auch nur
14 Sekunden was viel zu schnell ist also
den brauchen wir eigentlich gar nicht
probieren wir sind hier auch schon eher
in dem Bereich wieder Turbo shot ist
eine sehr spezielle Art das Shots
verlinke ich euch auch ähm hier oben bzw
hier unten in der Videobeschreibung ja
da habe ich noch schon mal ein Turbo
shot eingewählt könnte mal gucken was es
damit auf sich hat also hier sind wir
auf jeden Fall noch weit weg von dem
optimalen Ergebnis ja wir sind auch in
der Krämer relativ dünn bzw nicht
vorhanden also da ist nicht wirklich
viel passiert
ja also ich glaube das spare ich mir
jetzt auch den zu probieren das heißt
Marker muss noch mal deutlich feiner
werden und dann probieren wir es einfach
noch mal und gucken dass wir wie gesagt
in ungefähr 25 Sekunden auf unserer
Verhältnis von 1 zu 2 also auf ungefähr
32 Gramm Output kommen den
Blumen und einen Ausguss oder wohin auch
immer
also der shot ist schön gleichmäßig
angelaufen
na das sieht hat sich fast gleichzeitig
unten mit Kaffee gefüllt das ist immer
ein gutes Zeichen der Kaffee läuft jetzt
auch deutlich langsamer wir haben eine
deutlich schönere Crema Entwicklung
so wunderbar also wir waren sind der
Sache schon deutlich näher gekommen wir
waren jetzt bei 22 Sekunden was die
Mahlgradeinstellung angeht ich bin jetzt
von 15 auf 9 runtergegangen relativ
große Veränderung für die nisch aber wir
waren ja auch nur bei 14 Sekunden und
der Kaffee ist schon ein bisschen älter
das heißt ich muss den per se schon mal
ein bisschen fein was die Krämer angeht
schöne leichte Farbe also nicht so
dunkel wie man es von so einem dunklen
Espresso gewohnt ist wie gesagt wir
waren es auch bei 22 Gramm 22 Sekunden
für 1 zu 2 das ist jetzt keine sehr
intensive Extraktion und kann sehr lange
Kontaktzeit für so eine dunkle Rüstung
aber vielleicht durchaus ausreichend ich
würde sagen wir probieren das einfach
mal
ja gut also von der Nase her
röst darum röst da oben und
rosterung viel mehr kriegt man leider
nicht
riecht auch so ein bisschen nach
halten aber gut
ja also wie zu erwarten war

super bitter also auch hinten raus ich
schmeckt eigentlich nur bitte bitte
bitte
das ist das was viele leider auch oft
erwarten von so einem Kaffee und
es ist halt auch das Anwendungsfeld von
einem Kaffee in einem DM Markt sag ich
jetzt mal von dem Espresso der wird
heute oft in Vollautomaten gegeben und
dafür ist es dann wiederum besser man
hat was wirklich dumm also besser in
Anführungszeichen man hat was dunkles
weil Kaffeeautomaten Vollautomaten
anders extrahieren wie eine
Espressomaschine so eine
Siebträgermaschine
und in der Regel nicht so intensiv
extrahieren und viel längerecher haben
das heißt man braucht einen Kaffee der
ein bisschen mehr Dampf hat wenn man den
dann als Siebträger zubereitet
ja dann kommt sowas bei raus also sehr
sehr sehr bitter trotzdem nicht
sonderlich Fett also im Sinne von Textur
Reich körperreich also trotzdem relativ
dünn weil wir bei 22 Sekunden wie gesagt
noch relativ weit vorne sind gut was
macht man jetzt mit so einem Kaffee also
der ist so bitter den würde ich ungerne
noch länger laufen lassen bei den
Einstellungen die wir jetzt haben was
man aber für eine Möglichkeit hat ist um
die Bitterkeit zu reduzieren wir fahren
einfach die Temperatur massiv nach unten
also wie gesagt wir waren jetzt bei 92
Grad und wenn eure Maschine das hergibt
versuchen jetzt mal weit unter 80 Grad
zu kommen er unter 90° Entschuldigung
also das heißt ich versuche jetzt mal
auf ja 87 Grad 86 grad so was um den
dreht das wirklich massiv diese
Bitterkeit zurückbekommen können nimmt
einfach die geringste
Temperatureinstellung die die Maschine
gibt und versucht damit eure Glück so
mit 92 grad wenn wir kein Ergebnis
hinkriegen tendenziell was eigentlich
die Schuhe aussieht in Sachen Bitterkeit
wenn ihr jetzt aber ohnehin mit viel
Milch trinkt also keine Ahnung eine
Tasse hat mit 400 Milliliter wo ihr sagt
gut ich will ein riesen Cappuccino
riesen Pott oder ihr mögt solche Sachen
wie
Caramel frapiato Blabla Starbucks Zeug
dann passt so ein Kaffee wieder weil
dann habt ihr so viel anderes Zeug da
drin und süße und überhaupt was diese
Bitterkeit wieder rausnimmt aber so zum
pur trinken
schwirrig das machen wir jetzt ich fahre
die Temperatur runter und dann probiere
es einfach noch mal
also Kaffee ist wieder schön gleichmäßig
angelaufen
schauen wir mal ob der Bezug sich auch
gleichmäßig entwickelt
ja sieht soweit ganz okay aus
so sah soweit ganz okay aus Extraktion
ist gut gelaufen Krämer schaut und
verändert aus so wie vorhin jetzt nicht
super opulent liegt aber wahrscheinlich
auch daran wie gesagt dass der Kaffee
schon drei Monate alt ist
aber auch nicht sehr dunkel also passt
wie gesagt wir sind jetzt auf 86 Grad
runtergegangen also deutlich deutlich
kühler mit der Temperatur Verhältnis
haben wir gleich gelassen 1 zu 2 und der
Kaffee ist jetzt 23 Sekunden gelaufen
also grundsätzlich relativ vergleichbar
nur mit dem Unterschied dass wir weniger
Temperatur
ja von der Nase her
ist ein bisschen entspannter geworden
ist er so ein bisschen mandelig nussig
Zartbitterschokolade
gut aber halt immer noch röststoff ohne
Ende

immer noch sehr bitter aber deutlich
entspannter deutlich entspannter also
für jemanden der sagt er braucht
Bitterstoffe im Café
ist vielleicht gar nicht so verkehrt
für mich der tendenziell eher hellere
Rüstung trinkt die nicht so viel
Bitterstoffe haben trotzdem noch ein
brutales Brett also wirklich viel viel
Bitterstoffe das was hinten auf der
Zunge bleibt nach wie vor bitter bitter
bitter also wenn jemand mit Bitterkeit
Probleme hat ist das definitiv nicht der
richtige Kaffee es ist
ja für wen eignet sich der Kaffee es ist
ein Kaffee wie gesagt für Vollautomaten
tendenziell und für Leute die halt mit
Milch trinken weil bei Vollautomaten
bringt er die nötige Power mit wobei
Vollautomaten glaube ich auch ein
bisschen
missverstanden sind von den meisten
das ist aber ein Thema für ein anderes
Video aber grundsätzlich ja er bringt
halt so diese kaffeeröststoff Power mit
also für den Kaffee müsst ihr definitiv
wenn ihr da was halbwegs trinkbares
rausbekommen möchtet müsst ihr definitiv
gucken dass ihr möglichst weit runter
kommt mit der Temperatur wie gesagt ich
werde es auf 86 Grad man kann die
Blu-ray schon noch ein bisschen länger
ziehen also statt eins zu zwei
vielleicht eher auf 1 zu 2,2 dann würde
ich aber auch die Extraktionszeit
tendenziell eher wieder ein bisschen
kürzer wählen weil ihr dann durch die
längere pro-ray schon wieder ein
bisschen Extraktion bekommt also bei dem
Kaffee würde ich wirklich gucken dass
sie extraktionsraten eure ganzen
Stellschrauben für die Extraktion so
weit wie möglich runterdreht dass ihr
möglichst wenig von diesen Bitterstoffen
mitnimmt dann kann man da draußen noch
was ganz gut trinkbares produzieren so
schwierig also dann nimmt lieber den
Kaffee Creme nimmt ein bisschen mehr
Fruchtigkeit in Kauf weil da könnt ihr
nach oben hin mehr arbeiten
ja schade wenn er nicht ganz so dunkel
geröstet wäre dann hätte das ein ganz
netter Kaffee werden können ja aber man
sieht doch an den Boden die sind schon
recht ölig das heißt
dass sie einfach weit über den zweiten
Track geröstet sind man sieht auch ein
paar Brand Stellen an der einen oder
anderen Bohne also hier merkt man
einfach dass es intensiv geröstet um
halt den Mainstream sage ich jetzt mal
zu versorgen was ja auch bei dem
dm-kaffee durchaus die Zielgruppe ist
gut soweit dazu in dem Sinne

ausprobieren möchtet wenn nicht falls
